These are the best biscuits, EVER! Well that’s what Miss 6 tells me and seeing as she loves biscuits and is a bit of a connoisseur, I’ll take her word for it.
This is the first recipe in a new series which I’ll be sharing here on the blog. I'm calling the series “Bake From The Side” because that’s what I’ll be doing. Creating and sharing the recipes, found on the side of packets.
This Lemon Shortbread recipe was found on the side of a 1 kg packet of plain flour. It is simple to follow and for a first attempt, it was hugely successful. I will definitely be making these in future.
Lemon & Hazelnut Shortbread
Makes 26-30
Recipe Ingredients:
250g butter, softened
3/4 cup icing sugar, sifted
2 teaspoons finely grated lemon rind
1 egg
3/4 cup hazelnuts, ground – plus a little extra for sprinkling on top
2 1/2 cups of plain flour, sifted
1 teaspoon of baking powder
Lemon Icing:
1 cup pure icing sugar, sifted
1 tablespoon lemon juice
2 teaspoons of water
Method:
1. Preheat the over to 180 C or 160 C if fan forced.
2. Beat the butter, sugar and lemon rind until light and creamy. Beat in the egg. Fold in the hazelnuts, flour and baking powder until a soft dough forms.
2. Shape small balls of dough – approximately 1 tablespoon size and place on baking paper lined trays.
3. Bake for 13 – 15 minutes until slightly golden. Remove and cool. They will firm up when cool.
4. For the lemon icing, combine the ingredients in a small bowl to form a runny icing. Drizzle over the cold biscuits and sprinkle with extra hazelnut.
5. Allow the icing to set and then serve.
* You can substitute the hazelnut for pistachios, almonds or walnuts.
Honestly, these are really delicious and I'm so pleased that we had a go at making them. The dough is firm and not too sticky, which makes it perfect for the kids to help with. If you do have a go and making these biscuits, please let me know what you think of them.

DeleteYUMMM!!! I put Miss Nine to work yesterday afternoon ... it took her about 2hrs, but she did it all by herself, read all of the instructions, measured everything out herself, rolled all the biscuits. I just did the oven bit. She used almond meal because we didn't have any hazelnut and they are delicious!! Thanks for the recipe :-)
