Beans with Caramelised Onion & Rookwurst {Recipe}

Blended with mild spices, including cardamom, nutmeg and cloves, the DON® Rookwurst displays influences of the Dutchman’s early travels to Indonesia.

Bold in flavour, it has a distinguishing smoky character.

2 large Spanish (red) onions – sliced

1 x DON® Rookwurst sausage – sliced

1. On a low heat, warm the olive in a pan and add the sliced red onion. Allow the onion to caramelise slowly, stirring occasionally.

2. Once the onion is soft and translucent, raise the heat slightly and add the slices of DON® Rookwurst. Allow the sausage to warm through and become a little golden.

3. Add the cannellini beans and paprika to the mixture. Stirring so that the beans warm and the paprika is well spread within the mixture.

4. Top with the fresh thyme and serve.

Beans with Caramelised Onion & Rookwurst is a tasty side dish, but just delicious on it’s own served with a thick slices of buttered warm crusty bread.

DON® Smallgoods was born in Victoria back in 1947. In those days, the tradition of the neighbourhood family business was still very much a part of the Australian landscape. A North Essendon Butcher, R J Gilbertson began producing European style processed meats. His products were of the highest standards and he employed European master craftsmen, DON® Fleischmeisters, who brought from their homelands the traditional methods of curing and preserving meat.

I love cooking with European style meats and sausages. They can turn the most boring soup into something simply amazing. Every year, my family make chorizo sausage and so cooking with these types of products is a part of our culture. I’ve been experimenting and cooking with some delicious Don small goods.

Over the next couple of weeks, I’ll be sharing a few recipes which are simple yet delicious family favourites. Simple dishes which can be prepared as a quick weekday meal or to share with friends over a leisurely weekend lunch.
