Slow Cooked Chicken with Chorizo - Recipe

Winter is approaching and the slow cooker has come out of it's summer hibernation. I came across this fantastic recipe at www.kidspot.com.au and with a few tweaks, made it work for our family. We all loved it and my son said it was the best thing he ever ate (probably a bit of an exaggeration, but hey, I'll take what I can get), so I thought I'd share it with you.


Slow Cooked Chicken with Chorizo


Ingredients
1 tablespoon of oil
750g skinless chicken thighs
200g of chorizo sausage
4-6 kipfler potatoes (I found that these keep their shape well, but any other potatoes are ok)
3 large carrots
2 teaspons smoked paprika
1 onion
2 gloves garlic (crushed garlic in the jar is ok too)
400g tin diced tomatos

Method:

- Trim the chicken. Remove the bone and cut the chicken thigh in half long ways.
- Heat the oil in a pan and brown your chicken pieces (2-3 mins) and then pop them into the slow cooker.
- Slice the chorizo and brown in the pan (your kitchen will be smelling pretty good right about now). Add to slow cooker.
- Add thinly sliced onion, garlic, paprika, potatoes (if large, cut into approx 3cm pieces) and carrots (chopped into approx 2cm pieces).
- Add the tomato and then add another 3/4 of the tomato tin of water (or stock)

Now turn the slow cooker to low and let it simmer and bubble away for the next 4-5 hours.

Serve with some steamed green beans... or as is. We came home from ballet practice and soccer training and dug right in.Yum!

  3. It's getting to that sort of weather now - I did the big roast with all the vegies I could fit into the pan, last night to ward off the cold! I need to dig out the 'crockpot' from it's summer home and this sounds like a great recipe to try out. Thanks for sharing it.
