Herb Potatoes with Caramelized Garlic and Chorizo {Recipe}

It seems to be potato season round these parts. My local green grocer is selling huge 10kg bags of potatoes for $1.99. I of course, unable to resist a bargain, bought a bag. I’ve been thinking up ways to use them, other than the basic mash potato (which my kids love).

I’m sharing a dish today, which was one of those surprise ones. Those ones that you make up and are so good, you just think to yourself, wow.

Roasted Herb Potatoes with Caramelized Garlic and Chorizo

Herb Potatoes with Caramelized Garlic & Chorizo

Ingredients:
6 large potatoes
Extra Virgin Olive Oil
1 head of garlic
Thyme (or your favourite herbs)
1 Chorizo
Salt

Method:
Wash and then chop up the potatoes roughly. Place in a baking dish.
Chop up the chorizo and place in the baking dish.
Peel the garlic cloves, cut in half and place in the baking dish.
Drizzle with olive oil, salt and herbs.
Give it all a good mix. Place in a 200 degree celcius oven and bake until the potatoes are cooked through.

If you love the flavours of chorizo and garlic, you will love this side dish. They’re so yummy, it’s hard to stop eating.

  4. $1.99 for 10kg is unbelievable!! When we moved from Perth to Sydney one of the things that surprised me was how cheap fruit and veg was (compared to Perth!). We are back in Perth, so no chance of potatoes as cheap as that (though I have just planted some - fingers crossed!). I always make my roast potatoes with olive oil, salt, garlic and thyme (my fav herb!), but I'd never thought to put chorizo in it! Genius! I always have chorizo in the freezer so will add it next time. Might have to make it tonight, as the more I think about it the more I want to eat it right now!!

    1. Yes, that's one thing I've heard about Perth is the cost of things. Hubby had the opportunity to transfer to a Perth basing, but we're going to stick it out here for a while longer. Who knows, I may be heading your way in the next few years.
