Shortbread {Recipe}

The problem with having Foxtel (pay tv), is that they inspire me to create calorie laden delights… like this delicious shortbread.

Kirstie Allsop was my inspiration. She showed us how she learnt how to make shortbread and then entered her shortbread in a country show.

I may not be entering my shortbread in to a country show, but it was certainly a hit with everyone at home.


Shortbread Recipe

Shortbread {Recipe}
125g castor sugar
250g butter (room temperature)
375g plain flour
pinch of salt


Shortbread 1


Preheat oven to 170 degrees celcius

Add the sugar and sift the flour into a bowl.

Chop up the butter into approx 1cm cubes

Rub the butter into the flour/sugar mixture with the tips of your fingers.

Keep combining the mixture until it resembles bread crumbs

Press the mixture into a flan pan ensuring its is pressed nicely at the edges (to give it that wavy effect once it’s baked).

Sprinkle some castor sugar over the top and use a fork to press a pattern over the top (and help it bake through).

Bake for approximately 40 minutes

Cool in the pan

Once it’s cooled, slice into wedges.

Now sit down and enjoy some shortbread with a cup of tea

** If there is any left over, store in an air tight container

I adore the pavilion with all of the homemade and home-grown items. But I also love watching the dog shows and the horse jumping and wood chopping and the hay stacking and pumpkin bowling and … hmmm … perhaps I should have listed what I don’t like about he shows, since I think I like just about everything.
