Peach and Almond Upside Down Cake {RECIPE}

Winter is still upon us and the delicious stone fruits which we enjoy in the warmer summer months are still a little while away from reaching our stores.

Woolworths works with local Australian growers to supply delicious Woolworths Select Australian Canned Fruit for year round consumption.

I was recently invited to play along in a Ready! Steady! Cook! type of challenge with a box of ingredients from Woolworths. Honestly, this challenge got my brain going and I was super excited to bake and share my recipe with you today.

For this yummy sweet, crunchy cake, you will need these ingredients:

1 tin of Woolworths Select Australian Peach Slices (in juice)
3/4 cup of SR flour
1/2 cup of flaked almonds
1 egg
2 tablespoons caster sugar
1/2 cup brown sugar
50g butter

Method:

Preheat the oven to 180 degrees celcius
In a small saucepan, add the butter and brown sugar. Swirl around the pan until the sugar and butter dissolve into a lovely lush caramel.

Once the caramel is ready, pour it into the base of an 18cm cake tin.

Layer the peach slices onto the caramel in a pretty-ish pattern. Don’t throw out the peach juice. You will use this in the cake batter.

Time to make the cake batter.

Whisk an egg with the caster sugar.

Mix through the flour, almonds and some of the peach juice left in the tin. The batter needs to be wet enough to spread, but not runny (does that make sense?).

Spoon it over the peaches – carefully so as not to upset the slices you laid out prettily.

Bake for approximately 25 minutes. It’s a fairly thin cake base, so it won’t take too long to cook.

Remove the cake and let it cool slightly… and then think to yourself that maybe you should have made sure to spread the batter a little better.

Find a plate and prepare yourself to turn over the cake, remembering there will be some runny caramel which will ooze all over the place.

Take a photo of the turned over tin – just incase it turns into a red hot mess once the tin is lifted.

Pat yourself on the back when you lift the tin and the caramel oozes over the cake, just as it’s supposed to and your peaches don’t flop out all over the place. Yay!
Reward yourself with a piece of cake.
