Whole Orange Cake with Orange Drizzle and Coconut {Recipe}

It was a quiet afternoon here at home. The kids were playing nicely in the other room and hubby was catching up on sleep, after an exhausting few days at work.

I sat down to do some sewing, but sudden inspiration hit me to bake a cake… so I baked a cake and while it was cooking, I did some sewing. Perfect Sunday afternoon.

 

Whole Orange Cake Recipe

 

There has been a lot of chatter on Facebook stream lately, about Whole Orange Cake. Yes, my friends seem to chat about baking and cakes – a lot.

So I decided to give it a go and I honestly think this is one of the easiest cakes I’ve ever made. Such little effort for such a super, delicious result.

Whole Orange Cake with Orange Drizzle & Cocount

INGREDIENTS:

Cake

1 Orange

1.5 cups of Self Raising Flour

3 eggs

3/4 cup of castor sugar

150g butter (melted)

 

Icing

1 Orange (juice only)

1 cup icing sugar

1/2 cup of coconut

 

METHOD:

1. Preheat oven to 180 degrees celcius

2. Grease and flour the cake tin – I used a 20cm tin

3. Cut an orange into quarters (including skin and all) and process very well in a food processor. (My processor is small, so I cut my orange into 16 pieces).

4. Place the processed orange pulp into a bowl along with all of the cake ingredients.

5. Mix (by hand) with a wooden spoon until well combined.

6. Pour into the greased cake tin and bake for 30-40 minutes.

7. When cake is baked (springs back when touched) let it sit in the cake pan for a couple of minutes and then place on a plate. If you have one, a plate with high sides is perfect.

8. Use a chopstick or skewer to poke some holes all over the top of the cake.

9. Place the cup of icing sugar into a mixing cup with a pouring spout.

10. Squeeze the juice of the second orange into the icing sugar and mix until it’s smooth, runny and easy to pour.

11. Pour all over the cake, slowly and steadily. The icing sugar will fill up the little holes just created with the skewer.

12. Sprinkle the coconut over the top.

Serve and enjoy with some vanilla ice cream.

 

NB: Someone suggested adding chocolate to the cake mix – sounds delicious, doesn’t it? I’m going to try it with the addition of chocolate next time.

  5. Hi Anorina, have been meaning to comment for ages but never seem to have time!! Thank you so much for your recipe - I have made it over and over - it is just my "Save the Day" cake ! Just thought I would let you know that I have made a variation which seems to be well received. Once I have mixed all the ingredients I add some cardamom ( powder) and roughly ground pistachio nuts. I make Lemon icing and then just sprinkle some more crushed pistachios over the top, whilst the icing is warm. Thanks again

  6. Thanks Anorina, I use this gorgeous cake recipe all the time now! I have made a variation that seems to have been well received so thought I would share. Once batter is mixed up I add some cardamom powder and roughly crushed pistachios. Lemon drizzle icing and then whilst icing still wet I just sprinkle some more crushed pistachios over the top.

  7. This is delicious! I live in the US (unfortunately we're not on the metric system, so I had to do some conversions!) and baked it in a 9" round cake pan. I didn't have any coconut, but otherwise followed the recipe to the letter. It's wonderful, and so easy!
