Chocolate Rice Pudding with Nutella




Feeling under the weather with the winter blues? The winter lurgy has arrived at our house. Yuck! The kids and I have colds I have to admit that our moods are less than delightful right now. Miserable moods is probably a better description.  To cheer them (and me) up, I made some of our favourite rice pudding. 

I know that rice pudding isn't everyone's favourite dessert, but if you like it, you might like this variation on the traditional.




Chocolate Rice Pudding with Nutella

Makes 6 portions

200g medium grain rice - rinsed
800ml lite milk
2 tbsp cocoa powder
80g caster sugar
2 eggs - whisked
1 tsp vanilla extract
Nutella (to taste)


In a medium saucepan, place the rice, cocoa powder and approximately 750ml of the milk. Cook on a low heat for 30 minutes stirring regularly. The rice should be tender, but if not, cook for another couple of minutes.

While still on the heat, add the sugar, vanilla, eggs and the remaining milk. Stir through and cook for a further 2 minutes.

Divide the mixture into 6 ramekins. 

Dollop a spoonful of Nutella on the top.

Serve while it's still warm. YUM

  2. I L❤VE rice pudding! I hope it did the trick and made everyone feel better! I had a flu injection, so I have my fingers crossed that I might escape it this year!
