Lemony Snicket Slice {Recipe}

We’re super excited for the release of the new Lemony Snicket's A Series of Unfortunate Events which airs today (13 January) on Netflix. We first saw the preview for A Series of Unfortunate Events at the cinema, when we went to see "Sing" (which was such a fun film).
Based on the internationally best-selling series of books by Lemony Snicket  "Lemony Snicket's A Series of Unfortunate Events" recounts the tragic tale of the Baudelaire orphans -- Violet, Klaus, and Sunny – whose evil guardian Count Olaf will stop at nothing to get his hands on their inheritance. The siblings must outsmart Olaf at every turn, foiling his many devious plans and disguises, in order to discover clues to their parents’ mysterious death. 


The show starts Neil Patrick Harris as Count Olaf and promises to serve up some dark, gothic style comedy. I think that once kids are able to comprehend and follow directions (eg a recipe) then they’re ready for this more complex style of entertainment.

Now speaking of recipes, we decided that we needed a treat to eat while watching the show tonight. It won’t air in Australia until this evening, so it gave us plenty of time to make a Lemony Snicket Slice




What is Lemony Snicket Slice you may ask? Well, Lemony Snicket Slice is a regular lemon slice… but better because of the extra marshmallows. If your kids like to get involved in the kitchen, this recipe might be a good one for them to try these school holidays.






Lemony Snicket Slice

Slice
1.5 packets of wheat biscuits
100g of butter
1 can of sweet condensed milk
1/2 cup desiccated coconut
Lemon zest (or if you don’t have a fresh lemon, a couple of table-spoons of lemon juice)
Mini marshmallows

Lemon Glaze
3/4 cup icing sugar
Lemon juice
Desiccated (or shredded) coconut

Begin by lining a square or rectangle baking tin with baking paper.
Use a food processor to turn the biscuits into crumbs.
Pour biscuit crumbs into a mixing bowl and add the 1/2 cup of coconut and handful of mini marshmallows.
Melt the butter together with condensed milk over a low heat (approximately 5 minutes). Stir until it’s smooth.
Pour this warm liquid over the biscuit crumbs along with the lemon zest.
Stir until everything is combined.
Press the mixture into the baking tin. Try to make sure it goes all the way to the edges and is fairly straight on top (otherwise the icing sugar will pool).
Put this in the refrigerator to cool and set a little while we make the glaze.

Lemon Glaze
Mix lemon juice into the icing sugar until it’s a smooth (even a little bit runny) consistency.
Pour this over the slice and use the back of a spoon to spread it evenly.
Sprinkle with coconut and refrigerate again until the sugar on top is firm.

Cut into delicious lemony squares and enjoy.
