Chicken Macadamia Stir-Fry with Noodles {RECIPE + GIVEAWAY CLOSED}

The other week, I received an email asking if I’d be interested in cooking with Suncoast Gold Macadamia oil. Why yes, I would. Thank you very much.

I’m always up for trying new ingredients and recipes. For me, macadamia nuts have always been a chocolate coated treat which we send as “Aussie” gift to family and friends overseas.

Chicken Macadamia Stir Fry with Noodles

Chicken Macadamia Stir-Fry with Noodles
Serves 4

Ingredients:
1 400g packet of hokkien noodles
3 tablespoons Suncoast Gold Macadamia Oil
250g skinless chicken strips (I used chicken thigh meat)
1/2 red onion
2 cups of vegetables chopped/diced (beans, carrots, mushrooms etc…)
75g dry roasted Suncoast Gold Australian Macadamias
1 lime
3 tablespoons of sweet chilli sauce
Coriander (I used coriander paste, though fresh would be better)

Method:
Soak the noodles in boiling water for 1-2 minutes. Drain and set aside.
Heat the wok, add the oil.
Add the chicken, onion and stir fry for 3 minutes (until the chicken is golden and onions have softened).
Add the vegetables and stir fry for another couple of minutes until they’ve softened, though still crunchy.
Squeeze in the juice of the lime, add the sweet chilli sauce and coriander.
Finally toss in the noodles and macadamia nuts.
Serve and enjoy!

Do you use Macadamia Oil in your cooking? Up until last week, I hadn’t tried it, but have experimented with it in my cooking. I even made a batch of stove top popcorn with it, for movie night on the weekend.

  2. I love stirfrys i dont care what else goes into it but for me they must contain chicken, brocolli, garlic, ginger and bean srouts. Now i think i might just make one for dinner tonight :0)

  4. When I want to make a tasty dish,
    I never think of steak or fish.
    My wok gets a dash of Macadamia oil,
    then I put on the rice to boil.
    Broccolini, mushrooms, cashews and beef,
    an asian stir-fry just can't be beat!
    A beautiful aroma fills the house when its done,
    chopstick meals are so much fun!

  6. My favourite stir fry combination is all sort of Asian green vege like bok choi, choi sum with different kind of mushrooms, corn, bamboo shoot.

  8. I use chicken breast fillet strips, marinade them in garlic, lemon and spices, then add lots of fresh vegetables. I love silverbeet, bok choy, sugar snap peas, and more!
    I usually serve with couscous or rice.

  9. I have never tred macadamia oil in cooking, have see in salad dressings and that was yummy!
    My fav stirfry is a chow mein noodle with lots of crunchy veg and some chicken that has been marinated in char sui sauce! Mix it all up with some yummy light soy sauce, and maybe from now on some macadamia oil ;)

  10. My favourite stir-fry combination is ginger,garlic, onions, mushrooms, red bell pepper,carrots and peas.
    I have never used macadamia oil in cooking but would love to try it.......
