Broccoli, Potato and Ham Soup {Recipe}

I received a press release from ABC Organic Gardener magazine. I was about to reply and tell them that they had approached the wrong person. Gardening and I are NOT friends.

I don’t like gardening.

I don’t like the dirt.

I don’t like the bugs.

Grass makes me sneeze.

You get the picture, right?

Before responding, I had a quick look at the PDF attached to the email and came across a recipe for a broccoli soup. This issue discusses creative ways to turn broccoli into a tasty treat, that even the kids will love.

I was doubtful – but prepared to have a go.

The actual recipe had way more ingredients than I had at home, so I made do with what I had.




Broccoli, Potato and Ham Soup
Serves 2
1 large head of broccoli, trimmed and cut into small florets
2 medium potatoes, peeled and chopped into small pieces
100g ham – I used 4 slices of soccerball ham (or bacon – whatever you have in the fridge)
1 tablespoon of olive oil
1 teaspoon of crushed garlic
1/2 small onion
Vegetable stock
Pinch of salt

I have a Soup Maker so I just popped everything into the machine, turned it onto a 15 min cycle, and it was ready to serve.

If you don’t have a soup maker, you could make it in a regular small saucepan by softening the onion and garlic with the olive oil.

Add the rest of the ingredients and cook for 10 - 15  minutes.

Remove from the heat and use a stick blender to process the soup until it is smooth.

Serve with warm buttered toast. Yum!

It really was yummy… even though it looked like hot green slime in the bowl.

  1. I am not on Facebook and can't figure out how to use Raffle-copter (give me a break, I'm a grannie and it's 10:45pm). My WM would love to read that magazine. Coincidentally, we had cream of broccoli soup for dinner - potatoes, broccoli, stock and cream - it's a Donna Hay recipe. We had ours with parmesan toast - yummo!
