Apple Cake Recipe (Non Thermomix)

The other day, I was in the mood to bake. I whipped up a quick loaf of banana bread in the thermomix and decided that while the oven was on, perhaps I’d make another cake.



One of my favourite cakes which is a recipe on the Thermomix TM5 chip is the Apple Cake. It’s fast to make and absolutely delicious. When it was baked, I shared an image on Instagram (as you do) and the apple cake received a huge response - with many requests for the recipe.

I made it in the Thermomix, but honestly, there is no reason why it couldn’t be made with a regular mixer or even hand mixed (with a little elbow grease).

So here’s a slightly modified version of the apple cake recipe:

Ingredients:
120g softened butter, cut into cubes
3-4 granny smith apples, peeled and cut into quarters with the core removed
3 eggs
120g caster sugar
200g self raising flour (or plain flour with a tablespoon of baking powder)
1 tsp vanilla extract
Icing sugar (for dusting)

Method:
Preheat oven to 180C and grease a round cake tin (26-28cm).
With a sharp knife, make parallel cuts on the outside of the apple pieces, being careful to not cut right through.
Cream the butter and sugar, then add the eggs and beat again. Add the flour and vanilla and beat until combined. Don’t overwork the cake batter.
Pour the mixture into the baking tin and use a spatula to smooth and spread evenly.
Place the apple pieces on the top with the cuts facing up.
Bake for approximately 30 minutes until the cake is golden and a skewer comes out clean.
Allow the cake to cool and then dust the top with icing sugar before serving.

** This cake should also work well with pears or peaches etc. I’ll try the pear alternative next time.

  1. It is siimilar to a recipe I make. Sometimes I add a handful of dried cranberries and a few drops of almond extract. I cut my apples into chucks and press them randomly into the batter. Very yummy!
