McCormick Brazilian Bahian Chicken Recipe + GIVEAWAY {NOW CLOSED}

This year, McCormick celebrates it’s 125th anniversary. Their goal, is to connect people around the world as they share 1.25 million stories about the special role food and flavour play in our lives.

And they do play a special part – don’t you think? Smells and flavours transport us to another place. It can be the scent of cinnamon sprinkled on rice pudding reminding us of the treats grandma used to make. Or it could be the smell of sizzling aromatic spices, reminding us of a meal once shared with friends at a local eatery.


McCormick Cookbook Prize Pack


We all have a food story. Something with reminds us of a special time and a role it has played. To kick of it’s year long anniversary celebration, McCormick are asking that we share our own flavour stories. For every story shared, McCormick will donate to United Way to help feed those in need. Their goal is $1.25 million, so let’s all take a moment to bring for a memory and share our story.

How to do this:

Jump online at McCormick and share your story. It could tell the tale of your prized (secret recipe) dish, a family heirloom recipe or a memorable meal shared with a loved one. Head to McCormick and click the SHARE STORY button.

As a blogger, McCormick invited me to join the Flavour Forecast 2014 challenge. I’ve worked with McCormick numerous times in the past, so was eager to join in as they’re a wonderful brand and their product is one which I use at home, just about everyday.

McCormick has revealed five flavour insights, driving the future of flavour in the next few years and we were asked to choose one of the following and create a dish using McCormick herbs and spices:

I couldn’t resist the seductive mix of global and native influences in Brazilian food. Poised to emerge as the next big thing in cross-cultural cooking, Brazilian cuisine is a dynamic, seductive fusion of European, African, Asian and native Amazonian influences.
With the Soccer World Cup later this year and the upcoming Summer Olympics, Brazilian cuisine is set to inspire the world over.

Bahian Chicken Recipe
This all purpose seasoning blend is from the Brazilian state of Bahia and adds zest to many savoury dishes including chicken, pork, seafood, vegetables, soups and stews.

This spice mix can be stored in a tightly covered jar, but I make it fresh and use the whole lot in a meal. Yes, we like things spicy at our house.

1 teaspoon McCormick Ground Cumin
1 teapsoon McCormick Oregano Leaves
1/2 teaspoon McCormick Ground Pepper
1/4 teaspoon McCormick Ground Chilli Powder (I used McCormick Garlic and Chilli)
1 full double chicken breast – cut into cubes
3 tablespoons olive oil


McCormick - Bahian Seasoning Blend


1. Measure out all of the herbs & spices into a small bowl and mix. Coat the cubes of chicken with the spice mix.

2. In a large pan, heat the olive oil and then toss in the coated chicken cubes. The kitchen will being to smell amazing at this point and the family will approach with mouths watering. Get them to set the table as this will only take a couple of minutes to cook.

3. Turn the chicken cubes over to ensure that they’re cooked through, but make sure they don’t over cook.

4. Serve with a chick pea salad (or some mashed potato), a green salad and watch your children devour their dinner. Honestly, that simple mix of herbs and spices adds a magical element to boring old chicken.

  2. My husband and I both love to cook - tonight was a Caraway seed, Paprika and Fresh Thyme infused version of Beef Stroganoff. I love his Moroccan Tagines the best for their amazing spice and flavours. I will pop over now and add my story to the website. Bonus that I get an opportunity to freshen up my herb and spice collection, great that they are donating to such a great organisation. Thanks for sharing.

  5. I've been & shared how our family is learning to cook from scratch, using spices instead of pre packaged sauces. Smoked paprika would be the most used in our house.
