Gluten Free Chocolate Cake {Recipe}

Gluten-free means eliminating wheat, barley and rye from food. Personally, I’ve always steered clear of gluten-free baking. I always thought it was just too difficult and as none of my family members have food intolerances or allergies, I just stuck with what I knew.

But… I got brave and baked a cake. A gluten free cake. Honestly. Yum. I had a friend over the other day, who has a gluten intolerance and after reading through Gluten Free Entertaining by Olivia Dupin, I was inspired to have a go at baking.

Gluten Free Entertaining is divided up into 3 main sections:

1. Planning the Perfect Party

Includes instructions and ideas on how to Plan the Menu, Shopping, Prep for the party. This section also includes Liv’s Flour Blend recipe which is used throughout the book.

2. Celebrating the Holidays

This section covers most common holidays like New Years Eve, Easter and Christmas. It also includes a check list for counting down to the party. Things to prepare two days before the part, and one day before the party. Excellent ideas to get organised and most importantly, stay organised. We all love to be cool calm and collected during the actual event.

3. Special Occasions

Menu ideas for Kids Birthday Party, Date Night, Baby Shower or a Ladies Lunch (just to name a few).

This book is filled with beautiful photos, which is always important in a cook book. Beautiful photos can inspire the reader to get into the kitchen and start cooking, right?

 

Now, I’m no expert, but I do have to admit that this cake was quite delicious. So, for all of the requests I received on IG and FB, here’s the recipe for my Gluten-Free Chocolate Cake:

Ingredients:

3/4 cup caster sugar

3 eggs

2 heaped teaspoons baking powder

100g butter

2 cups of plain gluten free flour

1/2 cup grated dark chocolate

3-4 tablespoons cocoa powder

1/2 cup milk

 

Method:

1. Whisk the sugar and eggs. Once it’s light and frothy, beat in the butter.

2. Add the baking power and a cup of the flour. Beat the mixture until it’s incorporated. Add the milk and then beat again, slowly adding in the second cup of flour, the grated chocolate and the cocoa powder.

Simple, yes?

Grease a cake tin and pour in the mixture.

Bake at 180 degrees celcius for approximately 30 minutes or until the cake springs back.

Let the cake cool on a rack before adding the frosting (otherwise it will begin to melt, just like mine started to do – yikes!).

 

Gluten Free Chocolate Cake 1

 

Frosting:

100g soft butter

1 cup of pure icing sugar (icing mixture may contain gluten)

2 tablespoons of cocoa powder

Beat these ingredients all together and then frost the cake… liberally.

 

Gluten Free Entertaining is wonderful book. If you’re like me, and quite clueless when it comes to gluten free cooking, this is perfect for your cookbook library. It’s a great guide for entertaining friends or family, who may have gluten intolerances.
