Vanilla Cupcakes with Philly Chocolate Frosting {Recipe}

A few weeks ago, Philly were one of the generous sponsors at the Bloggers Brunch which I attended. Not only did they provide us with a very yummy lunch, but they also supplied bloggers with a thermal goodie bag, filled with the latest products from Philly.

I popped the yummy tubs of Philly in the back of my refrigerator, so that the kids couldn’t spot them (especially the Cadbury chocolate one)… until last night.

We made the Vanilla Cupcakes in the afternoon, straight after school.

And then, I was mean. I made the kids wait until after dinner before I allowed them frost and eat their cupcake.

But I was assured by both kids that it was definitely worth the wait. Definitely!

 

Vanilla Cupcake with Philly Choc Frosting 2

 

Vanilla Cup Cakes with Philly Chocolate Frosting

Prep Time: 25 minutes

Cooking Time: 20 minutes

Serves: 12

 

Ingredients

125g butter, softened

3/4 cup caster sugar

1 teaspoon vanilla

2 eggs, lightly beaten

11/2 cups SR flour, sifted

¾-1 cup milk

250g PHILADELPHIA Frosting Made with CADBURY Chocolate

100’s and 100’s, chopped nuts, coconut etc for decoration

 

Method

1. BEAT the butter and sugar and vanilla until light and fluffy. Add the eggs one at a time beating well between each addition. Fold through the flour and milk until combined. Spoon into 12 x 1/3 cup capacity patty paper lined muffin pans.

2. BAKE in a moderate oven 180oC for 15-20 minutes or until cooked when tested. Stand 5 minutes then turn out onto a wire rack. Cool.

3. SPREAD or pipe the frosting onto the cupcakes then decorate as desired. Serve immediately.

A few important notes from us:

If you’re not going to eat all of the cupcakes, cover and refrigerate them.

We overcame this, by only frosting the cupcakes we were going to eat, right then and there.

When you’ve finished frosting, place the lid back on the tub and return to the refrigerator – immediately. This will stop you from getting a spoon and spooning it straight into your mouth. We failed this part.

  1. Whoah, wait a minute! There's choc frosting made out of philly???? sorry I meant the other way round but WHAT? OMG! I now have another option to use for frosting!!

    1. Yes they do and it's soooo yummy! Also comes in a cream cheese with a hint of lemon variety. Mmmm... lemon coconut cake with lemon cream cheese frosting.

  2. Mmmm yum!!! Oh no, I can only choose one? Hmmm I'd have to say baked ricotta cheesecake, but not just from anywhere...I have a favorite place to buy it from. So creamy and rich with a good, solid pastry dusted with icing sugar. Ok, now I'm hungry :)

    1. Oh yummy! I haven't had baked ricotta cheesecake in years. Yes I think cheesecake is my favourite cake too... or black forest cake... or maybe orange coconut cake... it's too hard to decide.

    1. Kids birthdays are so busy, so it's nice to be able to pick up this type of frosting at the supermarket rather than having to make it yourself. Enjoy! It's really yummy.
