Donna Hay – Simple Dinners {Review + Giveaway}

Donna Hay has long been one of my favourite Australian cooks. I don’t think I’ve ever seen a dessert which she has made, that hasn’t looked truly scrumptious.

She is a best selling author of 20 cookbooks, editor of donna hay magazine, plus she’s completed production of her first television series; Donna Hay – fast, fresh, simple for the Lifestyle Channel.

Donna Hay has a wonderful new cookbook, simple dinners, and just in time for Christmas.

In simple dinners, Donna shows us how to take everyday ingredients and turn them into delicious weeknight meals.

If you have the versatile basics on hand, in your pantry, all you need to do is grab a few fresh ingredients and you have a quick and delicious dinner on the table.

baked chocolate and raspberry custards

baked chocolate and raspberry custards

125g dark chocolate, chopped

1 cup (250ml) milk

1 cup (250ml) single (pouring) cream

2 eggs

2 egg yolks, extra

½ cup (90g) brown sugar

¾ cup raspberries, plus extra, to serve

cocoa, for dusting

Preheat oven to 150°C (300°F). Place the chocolate, milk and cream in a saucepan over medium heat and stir until the chocolate has melted and the mixture is hot but not boiling.

Place the eggs, extra yolks and sugar in a bowl and whisk until well combined. Slowly add the hot chocolate mixture and whisk to combine. Divide the raspberries between 4 x 1-cup (250ml) capacity ramekins and pour over the chocolate mixture. Place the ramekins in a baking dish and pour in enough hot water to come half way up the sides of the ramekins. Bake for 35 minutes or until the custard is just set. Top with extra raspberries, dust with cocoa and serve warm or cold. Serves 4.

Mix ingredients together, shape into patties and fry until golden on both sides. Serve with a simple garden salad!
